Every now and again a resort truly stops us in our tracks. Designed by mexican architect miguel ángel aragonés, Viceroy Los Cabos doesn’t look quite like anything we’ve seen before, with its futuristic all-white architecture, mirrored pools and nest-like lattice structures. What’s more, there is some serious substance to back up the style, including luxurious lig ht-flooded accommodation, zingy mexican haute cuisine and superb fitness and wellness facilities, all set along a beautiful golden beach.

There are 192 rooms and suites, plus, a selection of casitas and villas. Many are located within brilliant white blocks that seem to float above the water. Floor-to-ceiling windows light up the chic, pared back interiors, and all rooms have a furnished private balcony or patio, LED smart TV, complimentary WiFi, Bluetooth sound system, Nespresso machine, mini bar and bathroom with rainfall shower and ROIL and Natura Bissé amenities. Most categories have a full or partial ocean view. The Junior Suites give you extra space with a living room and sitting area, and you can upgrade to a suite with a private plunge pool on your deck or balcony. The Three Bedroom Waterside Casita has a private rooftop terrace with pool, while the Four Bedroom Waterside Villa has adjoining nanny quarters and a kitchen with Miele appliances. The two-storey Five Bedroom Penthouse has a large open plan living room, rooftop pool, outdoor grill and dining area, and an outdoor shower.

The culinary team go to great lengths to make sure that their fruit, vegetables and meat are organic and locally sourced, and you have four different dining venues to choose from. Casero is the main restaurant, offering traditional Mexican cuisine, while Cielomar is a rooftop bar that serves wood-fired pizzas, seafood and flame-grilled steaks, and Nido is a ceviche and sushi joint housed within a spectacular upturned nest structure surrounded by water. The Nidito beach and poolside bar is Nido’s little sister, serving cocktails and an enticing array of light bites, including incredible fish tacos.

Bed & Breakfast 

There are five pools, including beachfront infinity pools that seem to blend almost seamlessly with the surrounding water features and an adults only rooftop pool. The 11,000-squarefoot spa has 11 treatment rooms, vitality pools, Jacuzzi, steam room and sauna, plus a hair salon, beauty bar and mani-pedi area. The fitness centre was designed by Harley Pasternak, personal trainer to the stars, and is kitted out with cardio and strength equipment, spin bikes and even an adult ‘jungle gym’. Group fitness classes and private yoga sessions are also available. The Generation V kids’ club organises activities including face painting, board games and piñata making. There are several highly-rated golf courses nearby, along with ample opportunity for watersports including snorkelling and scuba diving, and the resort hosts movie nights at its own on-site cinema
